Cilantro-Quick-Fried Pork Tripe Shreds

Ingredients

500 g (about 1 lb) pork tripe

Seasonings

50 g cilantro, 15 g cooking wine, 10 g each of scallion, ginger, and garlic, 5 g each of ginger juice and sesame oil, 3 g salt, and appropriate amounts of MSG, white pepper, vegetable oil, vinegar, and baking soda.

Instructions

1. Rub the pork tripe with baking soda and vinegar to remove the white fat and impurities, then rinse thoroughly with clean water. Blanch in boiling water, then drain and cook in fresh water with scallion segments, cooking wine, and ginger slices over low heat until tender. Remove and cut into fine shreds. Cut cilantro into segments and slice the garlic.

2. Heat oil in a wok until hot, add scallions, ginger strips, and garlic slices and stir-fry until fragrant, then add the tripe strips and stir-fry, splash in cooking wine, add salt, ginger juice, MSG, vinegar, white pepper, and cilantro, stir-fry everything together, drizzle with sesame oil and serve. This dish features a beautiful contrast of white and green colors and is delicious and appetizing.
