Celery Tossed with Sichuan Pepper Oil

Ingredients

750 g (about 1.6 lbs) fresh, tender celery.

Seasonings

50 g (about 1/4 cup) aged vinegar, 5 g (about 1 teaspoon) salt, 10 g (about 2 teaspoons) minced ginger, 12.5 g (about 1 tablespoon) Sichuan pepper oil, and MSG to taste.

Instructions

1. Remove leaves and roots from fresh celery, wash thoroughly, cut straight into 5 cm (about 2-inch) sections (split thick stalks in half lengthwise), blanch in boiling water until tender, remove and rinse under cold water, then drain well.

2. Then mix in salt, MSG, and aged vinegar, plate the dish, top with minced ginger, and pour over the heated Sichuan pepper oil to infuse the flavor. This dish is nutritious and has an enticing aroma.
