Stir-Fried Shredded Pork with Celery

Ingredients

Pork strips 50 g (about 1.8 oz), celery 500 g (about 1 lb).

Seasonings

Vegetable oil 10 ml (about 2 teaspoons), soy sauce 15 ml (1 tablespoon), cooking wine 3 ml (1/2 teaspoon), cornstarch 5 g (1 teaspoon), minced ginger 5 g (1 teaspoon), salt 5 g (1 teaspoon), chopped scallion 3 g (1/2 teaspoon), MSG 0.5 g (a pinch).

Instructions

1. Wash the celery, cut into 3 cm (about 1 inch) pieces, and blanch in boiling water; mix the shredded pork with cornstarch, soy sauce, and cooking wine.

2. When the wok is hot, add the shredded pork and stir-fry until about 80% done. Add the celery and stir-fry briefly, then add scallions, ginger, salt, and soy sauce. Stir-fry over high heat until everything is cooked through. Finally, add MSG (or omit), toss to combine, and serve immediately.
