Stuffed Tomatoes with Minced Pork

Ingredients

200 g (about 7 oz) tomatoes, 100 g (about 3.5 oz) pork, 100 g (about 3.5 oz) leafy green vegetables.

Seasonings

10 g vegetable oil, 10 g chopped scallions, 5 g salt, 20 g cornstarch, 6 g ginger juice.

Instructions

1. Wash the tomatoes, remove the stems, and set aside the seeds and core for later use.

2. Finely mince the pork, then mix in chopped scallions, ginger juice, some cornstarch, salt, and water to form a filling. Stuff the mixture into the tomatoes, then steam in a steamer basket for 15 minutes and remove.

3. Wash the leafy greens, cut into sections; heat oil in a wok, stir-fry the greens, add the reserved tomato seeds and pulp, thicken with a water starch slurry, then spread evenly on a serving plate. Place the steamed stuffed tomatoes on top and serve. This dish is visually appealing, delicious and satisfying, rich in zinc, vitamin A, vitamin C, protein, fat, and carbohydrates. It helps nourish the blood, strengthen the spleen and Qi, calm the mind, and warm the middle burner to promote bowel movement.
