Shrimp Slices with Baby Bok Choy

Ingredients

200 g bok choy, 50 g (about 1.8 oz) shrimp meat.

Seasonings

10 ml vegetable oil, 10 ml soy sauce, 5 ml cooking wine, 3 g salt, 2.5 g each chopped scallion and minced ginger, 5 g cornstarch.

Instructions

1. First, slice the shrimp meat into thin pieces (shrimp slices), coat them with soy sauce and cornstarch; wash the bok choy and cut it into 3 cm (about 1-inch) sections.

2. Once the oil is hot, add the coated shrimp slices and fry them briefly, then remove.

3. Stir-fry the bok choy until nearly tender, then add the shrimp slices along with cooking wine, salt, scallions, and ginger. Stir-fry vigorously over high heat for a few seconds, then transfer to a serving plate and serve immediately.
