Ingredients
300 g razor clams (about 10 oz), 150 g all-purpose flour (about 1 1/4 cups), 40 g cooked pork fat (about 3 tablespoons), 3 eggs.
Seasonings
5 cloves garlic, chopped green onion and salt to taste, 12.5 g (about 2 1/2 teaspoons) sesame oil.
Instructions
1. Dice the cooked pork fat into small pieces; wash the razor clams clean, blanch them in boiling water, remove the shells, and pick out any black impurities; beat the eggs; finely chop the scallions.
2. Heat 250 g (about 1 cup) of oil in a wok until hot. First, crush the garlic and stir-fry until fragrant. Then, combine the beaten eggs, diced pork fat, flour, salt, chopped scallions, and razor clam meat, and mix well. Pour this mixture into the wok and stir-fry until golden brown. Drizzle with sesame oil, give a quick toss, and serve immediately.
