Ingredients
4 eggs, 1000 g (about 2 lbs) spinach.
Seasonings
30 g unsalted butter, 1 tablespoon cooking oil, a few mint leaves, salt and pepper to taste.
Instructions
1. Wash the spinach and drain well; heat oil in a skillet, then add the spinach leaves one by one (work quickly, with no more than a few seconds between each piece).
2. Remove the spinach and drain in a colander to remove excess oil; crack the eggs into a bowl and gently whisk with a fork, then add salt and pepper. In a separate nonstick skillet, melt the butter over low heat, pour in the egg mixture, and cook over low heat, stirring constantly, until the eggs are fully set.
3. Take a small bowl or glass dish, first line the bottom with spinach, then pour in the egg mixture, and finally top with mint leaves for garnish. This dish has an appealing color and a slightly sweet finish.
