Instructions
1. Wash the beef and slice it into large thin pieces, then marinate with salt, rice wine, ginger, and scallions for 6 hours. Steam until fully cooked, remove from the steamer, let cool, and shred into fine strips.
2. Deep-fry the shredded beef in hot oil until crispy, then remove and drain. Toss with sugar, MSG, chili oil, Sichuan peppercorn oil, and sesame oil until well combined, then plate and serve. This dish is intensely spicy and numbing, with a dry, savory texture that is rich and satisfying.
