Two-Color Tofu

Ingredients

Blood tofu (coagulated pig's blood) and regular tofu, in equal amounts.

Seasonings

Chicken broth, cornstarch, and chopped green onions, each to taste.

Instructions

1. Cut the tofu into small cubes, blanch them in boiling water, then remove and arrange on a plate.

2. Add broth, starch, and chopped scallions to a pot, stirring constantly as it cooks. Once the mixture thickens, season with salt and pour over the tofu.
