Steamed Pork Ribs with Rice Flour

Ingredients

Pork ribs, rice flour, cilantro leaves, and broad bean paste, each to taste.

Seasonings

to taste: fermented tofu liquid, Sichuan peppercorns, minced ginger, minced scallions, broad bean paste, minced garlic, salt, MSG, ground white pepper, and vegetable oil.

Instructions

1. Cut the pork ribs into sections, then mix well with stir-fried Pixian broad bean paste, salt, minced ginger, minced scallions, Sichuan peppercorns, fermented tofu liquid, ground white pepper, and MSG. Add rice flour and vegetable oil, and stir until evenly coated.

2. Line a steamer basket with a lotus leaf, arrange the ribs on top, and steam for 40 minutes until cooked through. Remove, sprinkle with minced garlic and cilantro leaves, and transfer to a serving plate. This dish is savory, spicy, and aromatic, with tender, fall-off-the-bone ribs.
