Ingredients
500 g (about 1 lb) fresh asparagus lettuce (Chinese lettuce)
Seasonings
30 g vegetable oil, 10 Sichuan peppercorns, 4 g salt, 3 g chopped scallions.
Instructions
1. Remove the leaves and peel from the lettuce, wash it, then cut diagonally into 3 cm (about 1.2 inch) thin slices. Place in a bowl, blanch with boiling water, rinse with cold water, and drain well.
2. Heat a wok over high heat, add vegetable oil and heat until hot. Add Sichuan peppercorns and fry until they are about 90% done, then remove them. Add chopped scallions and fry briefly, then immediately add the lettuce stems. Stir-fry until evenly mixed, add salt, stir to combine, and remove from the wok. This dish is bright green in color with a fresh, savory aroma.
