Braised Sea Prawns with Cordyceps and Eucommia Bark

Ingredients

500 g fresh sea prawns (about 1 lb), 40 g each of cordyceps and raw eucommia bark, 1 teaspoon each of cooking wine and salt.

Instructions

1. Rinse the cordyceps and raw eucommia bark to remove any impurities; leave the shells on the prawns, trim off the whiskers and legs, devein them, then rinse and drain; bring 5 bowls of water to a boil with the cordyceps and eucommia bark to make a broth.

2. After simmering for about 40 minutes, add the prepared shrimp and season with wine to remove any fishy smell; once the shrimp are cooked through, add salt to taste and serve.
