Refreshing Hand-Torn Cabbage

Ingredients

1 head of green cabbage (about 500 g / 1 lb)

Seasonings

6 dried red chili peppers, 2 garlic cloves, 15 ml each of cooking wine and rice vinegar, 5 g each of white sugar and salt.

Instructions

1. Break the cabbage into large pieces by hand, blanch in boiling water until softened, then remove and plunge into cold water to cool. Drain and tear into smaller pieces by hand. Finely mince the garlic and set aside.

2. Heat the wok until hot, then add oil. When the oil is about 50% hot, add dried red chili peppers and minced garlic, stir-fry until fragrant. Add the shredded cabbage, drizzle in cooking wine and rice vinegar, season with white sugar and salt, and stir-fry everything evenly before serving.
