Stir-Fried Shrimp with Silky Eggs

Ingredients

300 g (about 10 oz) shrimp, 3 eggs, and some stock as needed.

Seasonings

500 g (about 1 lb) peanut oil, 30 g wet potato starch, 3 g cooking wine, 2 g salt, and scallion and ginger to taste.

Instructions

1. Rinse the shrimp, devein them, then toss with salt, cooking wine, 1 egg white, and 2 g cornstarch until evenly coated.

2. Crack the eggs into a bowl, add salt to taste, and beat until well combined. Heat oil in a wok, pour in the egg mixture, and cook until about 50% set. Add the shrimp, stir-fry until cooked through, then transfer to a plate and serve.
