Ingredients
350 g fresh soybean sprouts, 11 g shredded wood ear mushrooms.
Seasonings
5 g red chili pepper strips, 1 g each of scallion and ginger strips, sesame oil, Sichuan peppercorns, soy sauce, Shaoxing wine, vinegar, sugar, and salt to taste.
Instructions
1. Wash the bean sprouts, trim off the roots, boil in boiling water until cooked, drain well, and arrange on a plate.
2. Heat sesame oil to 170°C (340°F), add Sichuan peppercorns and fry until golden, then remove them; add shredded chili pepper, scallion, and ginger, then add shredded wood ear mushrooms, soy sauce, Shaoxing wine, vinegar, sugar, and salt in order, bring to a boil, then pour over the bean sprouts and serve. This dish is delicious and nutritious.
