Amber Chicken Feet

Ingredients

500 g (about 1 lb) chicken feet

Seasonings

30 g scallion segments, 2 slices ginger, 3 g cinnamon stick, 1 teaspoon sugar, 1 teaspoon fermented rice wine, 4 teaspoons soy sauce, 1/2 teaspoon sesame oil, 240 g (about 1 cup) stock, 1000 g (about 4 cups) vegetable oil (about 60 g will be absorbed).

Steps

1. Cut off the tips of the chicken feet, rinse clean, blanch in boiling water, drain, then place in a bowl and toss with soy sauce and fermented rice wine (lao zao), let marinate for 10 minutes.

2. Heat vegetable oil in a wok or pot, first deep-fry the chicken feet until the skin wrinkles, then drain the oil. Next, add scallion segments, ginger slices, and cinnamon stick, stir-frying until fragrant.

3. Then add sugar, a splash of soy sauce, and stock; bring to a boil. Add the chicken feet and braise until fully flavored. Drizzle with sesame oil, transfer to a plate, and serve.
