
Ingredients
200 g fresh clams, 30 g red chili pepper pieces, 2 preserved plums, 10 g lemon slices.
Seasonings
15 g minced garlic, a small amount of licorice root, 1/2 teaspoon sugar, 1 teaspoon Shaoxing wine, 3 tablespoons soy sauce.
Steps
1. Wash the clams clean, place them in a pot of fresh water and cook until the shells just begin to open, then remove and drain; strain and reserve the clam cooking liquid for later use.
2. Place the red chili pieces, preserved plums, lemon slices, and licorice in a container, then add minced garlic, sugar, cooking wine, soy sauce, and some clam broth, stirring to combine. Add the clams and refrigerate for 50 minutes before serving.
