
Ingredients
1000 g (about 2.2 lbs) dried tofu shreds.
Seasonings
20 g scallion segments, 15 g ginger slices, 2 teaspoons salt, 1 teaspoon MSG, a drizzle of sesame oil, 1500 g (about 6 1/2 cups) braised meat master stock, 1000 g (about 4 1/2 cups) vegetable oil (about 75 g / 1/3 cup will be absorbed).
Steps
1. Blanch the dried tofu shreds in boiling water, then remove and drain well.
2. Heat vegetable oil in a wok to 350°F (180°C), add the dried tofu strips and deep-fry until light golden, then remove and drain the oil.
3. Bring the seasoned broth, scallion segments, ginger slices, salt, and MSG to a boil in a pot, then turn off the heat, add the dried tofu strips and let them soak for 3 hours; when serving, drizzle with sesame oil and arrange on a plate.
