
Ingredients
150 g (about 5 oz) vermicelli noodles, 150 g (about 5 oz) fresh shrimp, 20 g (about 4 teaspoons) lemon juice.
Seasonings
10 g ginger slices, 15 g each of scallion sections and pickled wild peppers, a pinch each of sugar, fish sauce, and white pepper, and 2 teaspoons of cooking wine.
Steps
1. Rinse the shrimp, split them in half lengthwise, and blanch in boiling water with ginger slices, scallion segments, pepper, and cooking wine until just cooked through, then remove and let cool.
2. Soak the vermicelli in warm water for 30 minutes, then blanch in boiling water, drain and rinse under cold water; remove the stems from the pickled wild chili peppers and mash them into a paste.
3. Place the shrimp and vermicelli noodles in a serving dish, add pickled chili paste, sugar, fish sauce, and lemon juice, then toss everything together until well combined. Serve immediately.
