Fresh squid 1000 g (about 2.2 lbs), a small amount of red chili pepper strips.

Scallion white strips, minced garlic, light soy sauce, MSG, sesame oil, and vegetable oil, each to taste.
Steps
1. Remove the head and membrane from the fresh squid, clean out the innards (without cutting open the body), wash thoroughly, then blanch in boiling water until just cooked through, drain well, slice crosswise into 1 cm (about 1/2 inch) rings, and arrange on a serving plate.
2. Place a wok over high heat, add oil and heat until hot. First, stir-fry the minced garlic until fragrant, then add shredded scallion whites and red chili peppers, along with light soy sauce, MSG (or to taste), and sesame oil. Stir everything together to create a sauce, then pour it over the squid rings, toss to coat evenly, and serve.
