Drunken Chicken

Ingredients

1 whole young chicken, cleaned

Seasonings

A few scallion sections, a few slices of ginger, 8 cloves, 3 bay leaves, 2 star anise, 90 g (about 1/3 cup) each of salt and fermented rice wine sauce (zhao lu), 2 teaspoons MSG, 3 tablespoons each of rock sugar and Shaoxing cooking wine, and 2 tablespoons of baijiu (Chinese white liquor).

Steps

1. Rinse the young chicken clean, place it in a pot of water, and cook until just done, then remove and drain.

2. Add an appropriate amount of water to a clean pot, then add bay leaves, star anise, cloves, scallion segments, ginger slices, salt, MSG, and rock sugar, bring to a boil, then turn off the heat and let cool. Stir in fermented rice sauce, cooking wine, and baijiu (Chinese liquor) to create the drunken chicken marinade.

3. Cut the cooked young chicken into pieces, place them in a small jar, pour in the drunken chicken marinade, seal tightly, and let it marinate for 24 hours before opening and serving.
