
Ingredients
300 g (about 10.5 oz) silken tofu, 150 g (about 5.3 oz) each chicken gizzards and chicken livers.
Seasonings
10 g minced garlic, 1 teaspoon each of sugar and rice vinegar, 1/2 teaspoon each of salt and MSG, 2 teaspoons soy sauce, and sesame oil and chili oil to taste.
Steps
1. Rinse the tofu, cut it into diamond-shaped slices, place them in a strainer, blanch thoroughly with boiling water, drain well, and arrange on a serving plate.
2. Remove the tough outer skin from the chicken gizzards and rinse clean; rinse the chicken livers and slice thinly. Blanch each in boiling water until cooked through, then drain and place on top of the tofu.
3. In a small bowl, combine soy sauce, sugar, rice vinegar, salt, MSG (or omit), minced garlic, chili oil, and sesame oil, stirring well to create a dressing. Pour this dressing over the sliced chicken gizzards and chicken livers, then serve immediately.
