
Ingredients
300 g (about 10 oz) green asparagus lettuce, 25 g (about 1 oz) small red chili peppers.
Seasonings
1 tablespoon salt, 1/2 teaspoon MSG, a pinch of Sichuan pepper powder, and 2 teaspoons sesame oil.
Steps
1. Peel the green asparagus lettuce, wash it, and cut into 10 cm (about 4-inch) long strips that are 1 cm (about 1/2-inch) thick. Place in a bowl, add salt to taste, and let it marinate.
2. Remove the asparagus lettuce strips, wrap them tightly in cheesecloth, place in a dish, and press with a heavy object (like a cutting board) to drain excess water; wash the small chili peppers and mince finely.
3. Mix a pinch of salt, MSG (or to taste), minced Sichuan chili peppers, ground Sichuan pepper, and sesame oil in a bowl to create a dressing, then toss with the green asparagus lettuce strips until well coated, plate, and serve.
