Tofu with Chinese Toon Leaves

Ingredients

2 blocks of tofu, 50 g (about 1.8 oz) Chinese toon leaves.

Seasonings

Sesame oil and fine salt, 1/2 teaspoon each, and Sichuan peppercorns to taste.

Steps

1. Place the Chinese toon leaves in a bowl, add Sichuan peppercorns and salt (omit salt if using salted toon), pour boiling water over them to blanch, cover the bowl with a small plate and let steep for a few minutes, then remove the toon, discard the peppercorns, trim away any tough stems, straighten the leaves, and finely chop them crosswise.

2. Cut each piece of tofu into two slices, then cut diagonally to form triangles. Arrange them neatly on a plate, sprinkle the chopped Chinese toon leaves in the center, add salt to taste, and drizzle with sesame oil. Toss gently and serve.
