
Ingredients
300 g Chinese chives, cut into segments, and 100 g fresh shelled shrimp.
Seasonings
5 g ginger slices, 1/2 tablespoon salt, 1/2 teaspoon each MSG and cooking wine, 1 teaspoon each sugar and water starch, a dash each of Sichuan pepper oil and sesame oil, 100 g (about 1/2 cup) vegetable oil.
Steps
1. Rinse the shrimp, place them in a bowl, and mix with cooking wine, salt, and ginger slices. Marinate for 5 minutes, then remove the ginger slices. Add water starch and mix well to coat. Slide the shrimp into a hot oil pan and cook until just done, then remove and drain excess oil.
2. Blanch the chive segments briefly, then remove and let cool. Arrange on a plate, top with the shrimp, add the seasonings, drizzle with Sichuan pepper oil and sesame oil, toss to combine, and serve.
