Squid in Savory Sauce

Ingredients

600 g squid (cut into pieces), 200 g radish strips, 50 g Asian pear strips.

Seasonings

Seasoning packet (star anise, Sichuan peppercorns, angelica root, cinnamon, nutmeg) a pinch each, minced scallion, minced ginger, and sliced garlic 15 g each, salt 3 tablespoons, sugar 2 teaspoons, chili powder and soy sauce 1 tablespoon each.

Steps

1. Add salt to the squid pieces and carrot strips separately, let them marinate for 20 minutes, then remove and rinse clean.

2. Blanch the squid pieces in boiling water, then remove and drain.

3. Add water and the spice packet to the pot and bring to a boil, then remove and discard the spices. Add the seasonings and cook to form a sauce, then add the squid strips, radish strips, and pear strips, braising until flavored. Reduce the sauce until thickened, then plate and serve.
