Chilled Pork Skin in Chili Oil

Ingredients

250 g (about 1/2 lb) pork skin

Seasonings

30 g (about 1 oz) white scallion strips, 1/2 teaspoon each of salt, MSG, soy sauce, sugar, Sichuan pepper powder, and sesame oil, 2 tablespoons chili oil.

Steps

1. Scrape any remaining hairs from the pork skin clean, blanch in boiling water for about 5 minutes, then remove and scrape and rinse once more. Place in a pot of warm water and continue cooking for 30 minutes until the skin is very tender. Remove and rinse under cold water, then press flat with a heavy weight until completely cooled (to keep the skin flat). Slice into thin pieces, then cut into long strips.

2. Place the shredded pork skin and white scallion strips in a bowl, add salt, MSG, soy sauce, sugar, Sichuan pepper powder, chili oil, and sesame oil, then toss well to combine before plating and serving.
