
Ingredients
1500 g (about 3.3 lbs) cabbage, 150 g (about 1 1/2 cups) shredded radish, 80 g (about 1 cup) shredded scallions.
Seasonings
60 g minced garlic, 50 g scallion segments, 150 g salt, 1 tablespoon sugar, 4 teaspoons chili powder, 100 g shrimp paste.
Steps
1. Remove the root from the cabbage, peel off the leaves, wash them, and drain; dissolve salt in 1000 g (about 4 cups) of cold boiled water, add the cabbage leaves and soak for 2 hours, then remove and drain.
2. Mix the shredded radish with chili powder, salted shrimp paste, fine salt, sugar, minced garlic, shredded scallions, and scallion segments, stirring well to form the pickling seasoning.
3. Evenly coat the cabbage leaves with the pickling mixture, layer them in a jar, weigh them down with a heavy object, and let pickle for 7 days. Remove, shred into strips, and serve on a plate.
