
Ingredients
2 pork hearts.
Seasonings
a dish of pickled ginger slices, 2 tablespoons each of salt and Shaoxing cooking wine, 1 tablespoon chicken bouillon, and 1 spice packet (containing 15 g tea leaves, 4 slices licorice root, 3 star anise, a pinch each of Sichuan peppercorns and black peppercorns, and 1 piece cassia cinnamon).
Steps
1. Cut open the pork heart, remove the white tendons, rinse clean, secure with bamboo skewers, blanch in boiling water until fully cooked, then remove and drain.
2. Add water to a pot, place the spice bundle in and bring to a boil, then add the pork heart and cook for about 20 minutes, turn off the heat and let it soak for 1 hour to absorb the flavors.
3. Remove the pork heart, let it cool, take out the bamboo skewers, slice thinly, arrange on a plate, and serve with pickled ginger slices on the side.
