
Ingredients
500 g (about 1 lb) chicken gizzards.
Seasonings
5 g scallion segments, 5 g ginger slices, 3 g Sichuan peppercorns, 2 teaspoons salt, 1 teaspoon MSG, 4 teaspoons each sugar and rice vinegar, 1 tablespoon Shaoxing wine.
Steps
1. Remove the fat from the chicken gizzards, rub them with a little salt and rice vinegar, then rinse thoroughly with water. Place them in a pot of water, bring to a boil, blanch for 1 minute, then remove and rinse under cold water.
2. Add clear broth, salt, MSG, scallion sections, ginger slices, cooking wine, and Sichuan peppercorns to a pot and bring to a boil. Add the chicken gizzards and cook for 20 minutes, then remove and drain.
3. Place the smoking pan over heat, sprinkle in white sugar, set a rack inside, arrange the chicken gizzards on the rack, cover, and smoke for 20 seconds. Remove, plate, and serve.
