500 g (about 1 lb) of cleaned chicken feet
Seasonings
5 g each scallion sections and ginger slices, 1/2 teaspoon each sugar, chicken bouillon, and sesame oil, 3 tablespoons shrimp paste, 1 tablespoon shrimp oil, 1 teaspoon cooking wine, 240 g chicken broth, 2000 g vegetable oil (about 60 g will be absorbed).
Steps
1. Bring chicken broth, scallion segments, and ginger slices to a boil in a pot, then add cooking wine and shrimp oil and simmer briefly; pour into a bowl, remove the scallion and ginger, then stir in sugar and chicken bouillon until dissolved, and let cool to create a savory broth.
2. Cook the chicken feet in boiling water until about 90% done, then drain and pat dry. Lightly marinate with soy sauce, then rinse with hot water and place in a bowl. Soak in shrimp paste and fresh broth for 15 minutes. Arrange on a plate, drizzle with sesame oil and fresh broth, and serve.
