
Ingredients
400 g (about 14 oz) skinless chicken breast, 25 g (about 1/2 cup) cilantro, cut into sections.
Seasonings
to taste: scallion sections, shredded scallions, ginger slices, star anise, salt, garlic chili sauce, sugar, soy sauce, and scallion oil.
Steps
1. Mix the chicken breast with salt and cooking wine until well combined.
2. Place a clean pot over high heat, add water and bring to a boil. Add scallion sections, ginger slices, and star anise, then add the chicken breast and cook until tender and cooked through. Remove and drain well.
3. Shred the cooked chicken into thin strips, place in a serving dish, and sprinkle with shredded scallions and cilantro segments, then toss to combine evenly.
4. Briefly dry-fry the minced garlic and chili sauce in a pan, then add sugar, soy sauce, and scallion oil to make a sauce. Transfer to a small dish and serve alongside the shredded chicken.
