
Ingredients
2 pairs of duck intestines, 2 red bell peppers, 1 green bell pepper.
Seasonings
Green onion segments, minced garlic, salt, sugar, chicken bouillon, cooking wine, light soy sauce, fermented black beans, sesame oil, and vegetable oil, all to taste.
Steps
1. Place the duck intestines in lightly salted water, add a little starch, mix well, and rinse thoroughly. Cut into sections, cook in boiling water until done, then remove and drain.
2. Remove the stems and seeds from both green and red bell peppers, wash them, cut into pieces, blanch briefly in boiling water, then drain.
3. Heat oil in a wok until hot, then sauté scallions and garlic until fragrant. Add the seasonings and bring to a simmer to create a sauce. Arrange the duck intestine segments, green bell pepper slices, and red bell pepper slices on a serving plate, then pour the sauce over the top and serve.
