
Ingredients
300 g fiddlehead ferns, 100 g cooked shredded dog meat, 1 red chili pepper.
Seasonings
Minced garlic and minced ginger, 10 g each; fine salt, rice vinegar, and chili oil, 1 teaspoon each; sugar and Sichuan pepper oil, 2 teaspoons each; soy sauce, 1 tablespoon.
Steps
1. Wash the fiddlehead ferns and red chili peppers separately, then cut them into segments.
2. In a small bowl, combine Sichuan peppercorn oil with chili oil, minced garlic, minced ginger, soy sauce, rice vinegar, and sugar, stirring well to create the dressing.
3. Bring water and a pinch of salt to a boil in a pot, briefly blanch the red chili strips, remove, then add the bracken fern segments and blanch until tender, remove and drain.
4. Place the bracken fern segments on a plate as a base, then top with shredded dog meat and red chili strips, and pour the prepared seasoning sauce over everything.
