Cold Tossed Sea Hare (Spicy Sea Hare Salad)

Ingredients

500 g (about 1 lb) sea hare, 50 g each green and red hot peppers, 40 g scallion segments.

Seasonings

Garlic paste 5 g (about 1 teaspoon), fine salt, chili oil, and fragrant vinegar 1 teaspoon each, MSG 1/2 teaspoon, scallion oil 2 teaspoons.

Steps

1. Remove the skin and innards from the sea hare, rinse thoroughly, blanch in boiling water, then remove and rinse under cold water, drain, and cut into segments.

2. Remove the stems from the green and red chili peppers, wash them, cut into rings, blanch in boiling water, then remove, rinse under cold water, and drain.

3. Place the sea hare pieces and pepper rings in a bowl, add scallion segments, minced garlic, salt, MSG, chili oil, rice vinegar, and scallion oil, then toss everything together until well combined.
