Green Bean Salad with Pressed Tofu

Ingredients

250 g firm tofu (about 1/2 lb), 200 g green beans (about 7 oz).

Seasonings

10 g minced ginger, 1 teaspoon salt, 1/2 teaspoon MSG, 1 tablespoon each sugar, soy sauce, and Sichuan pepper oil.

Steps

1. Slice the dried tofu into pieces, briefly blanch in boiling water, drain well, and arrange on a serving plate.

2. Trim and wash the green beans, then cut them on the diagonal into slices. Briefly blanch in boiling water, remove and rinse under cold water, drain well, and add to the plate with the dried tofu.

3. In a small bowl, combine soy sauce, MSG (or to taste), salt, minced ginger, sugar, and Sichuan pepper oil to make a dressing. Pour over the dried tofu and green beans, toss well, and serve.
