Spicy and Numbing Dried Shredded Bamboo Shoots

Ingredients

200 g dried bamboo shoots, 10 g toasted sesame seeds.

Seasonings

chopped scallions and Sichuan pepper powder 5 g each, salt and MSG 1/2 teaspoon each, soy sauce 1 teaspoon, sugar and sesame oil a pinch each, chili oil 40 g.

Steps

1. Soak the dried bamboo shoots in fresh water until fully rehydrated, changing the water several times during the process. Remove any tough, fibrous parts and any remaining bamboo shoot husks. Cut into 8 cm (about 3-inch) sections, then place in a pot of boiling water and cook over medium heat for 30 minutes. Drain, let cool, and cut into 0.3 cm (about 1/8-inch) thick matchsticks.

2. Place the shredded bamboo shoots in a bowl, add salt, sugar, MSG, and soy sauce, and mix well. Then add Sichuan pepper powder, chili oil, sesame oil, toasted sesame seeds, and chopped scallions, stirring thoroughly. Transfer to a serving plate and serve.
