Warm Tossed Baby Bok Choy with Aromatic Oil

Ingredients

1000 g (about 2.2 lbs) of bok choy or Chinese greens

Seasonings

10 g scallion segments, 10 g ginger pieces, 1 teaspoon salt, 2 teaspoons chili oil.

Steps

1. Trim the roots and remove any old leaves from the bok choy, wash thoroughly, then cut into 3 cm (about 1-inch) pieces. Blanch in boiling water until just tender, then drain well. Wash the scallion segment and cut into fine shreds. Peel the ginger, wash, and mince finely.

2. Place the bok choy pieces in a dish, mix in salt, then sprinkle with shredded scallion and minced ginger. Drizzle with hot chili oil and toss everything together until well combined.
