Ingredients

300 g young chicken meat, 30 g finely chopped green hot peppers, 20 g finely chopped red hot peppers, 10 g toasted sesame seeds.

Ginger slices, scallion segments, and dried chili pepper segments, 10 g each; 2 tablespoons each of spicy chili sauce and chili oil; 1 tablespoon vegetable oil.

Steps

1. Wash the young rooster meat, place it in a pot of water with ginger slices and scallion segments, cook until done, remove and let cool, then chop into rectangular pieces.

2. Heat vegetable oil in a wok over medium heat, then add the minced green chili peppers, minced red chili peppers, and dried chili segments, and dry-fry until fragrant and spicy.

3. Add chili oil, spicy sauce, and toasted sesame seeds, stirring to combine into a flavored sauce, then add the chicken pieces and toss over high heat until evenly coated, then transfer to a serving plate and serve.
