Oil-Salt Tofu

Ingredients

500 g (about 1 lb) tender tofu, 10 g toasted sesame seeds.

Seasonings

5 g Sichuan peppercorns, 1 teaspoon salt, 1/2 teaspoon sugar, a pinch of chicken bouillon powder, 2 teaspoons vegetable oil.

Steps

1. Cut the tender tofu into small cubes, blanch them in boiling water, then drain and place on a plate. Sprinkle with salt and let marinate for 20 minutes, then pour off any excess liquid. Add sugar, chicken bouillon, and toasted sesame seeds, and toss to combine.

2. Place a wok over heat, add vegetable oil and heat until hot. Add Sichuan peppercorns and fry until they turn black, then remove and discard the peppercorns. While still hot, pour the infused peppercorn oil over the tofu, mix well, and serve.
