Steps
1. Wash the spinach, cut into segments, blanch in boiling water, remove and rinse under cold water, squeeze dry, and place in a bowl; separately blanch the sliced mushrooms, walnuts, and almonds in boiling water, remove, rinse under cold water, and drain.
2. Heat vegetable oil in a wok or skillet over medium-high heat, then add shredded scallion, shredded ginger, shredded ham, and dried shrimp along with cooking wine, stir-frying briefly until fragrant; pour this mixture over the spinach in a bowl, then add the remaining ingredients and seasonings, tossing everything together until well combined.
