Sichuan Pepper and Vinegar Lettuce Salad

Ingredients

300 g tender lettuce (about 10 oz), 2 tomatoes.

Seasonings

1 teaspoon salt, 50 g (about 1/4 cup) lemon juice, 4 teaspoons sugar, 40 g (about 3 tablespoons) cold water.

Steps

1. Peel and wash the tender lettuce, cut into 3 cm (about 1-inch) cubes, blanch in boiling water until just cooked through, then remove and rinse under cold water to keep the color bright green.

2. Blanch the tomatoes in boiling water for 1 minute, then remove, peel, and cut into pieces.

3. Add salt, sugar, lemon juice, and cold boiled water to a bowl and stir well to combine, then add the diced lettuce and tomato, toss to coat, and arrange on a serving plate.
