Fava Beans with Wood Ear Mushrooms Tossed in Aromatic Oil

Ingredients

100 g wood ear mushrooms, 50 g each of fresh fava beans and walnuts, 10 g each of dried chili peppers and cilantro segments.

Seasonings

5 g minced garlic, 1 teaspoon salt, 1/2 teaspoon each sugar and rice vinegar, 2 tablespoons vegetable oil.

Steps

1. Soak the wood ear mushrooms in warm water until softened, then trim and rinse them clean. Blanch in boiling water, drain well, and place in a bowl.

2. Rinse the fava beans and walnuts, blanch them in boiling water, then drain and add to the wood ear mushrooms. Season with salt, sugar, rice vinegar, and minced garlic, then toss to combine.

3. Heat vegetable oil in a wok until hot, then add dried chili peppers and fry until fragrant. Pour the hot oil over the fava beans, sprinkle with cilantro segments, toss to combine, and serve on a plate.
