Scallion Oil Tofu Skin

Ingredients

200 g dried tofu sticks (yuba), 15 g dried shrimp.

Seasonings

50 g scallions, 1 teaspoon salt, 1/2 teaspoon MSG (or to taste), 2 teaspoons scallion oil.

Steps

1. Soak the dried bean curd sticks in warm water until softened, then rinse and cut into small sections; trim and wash the scallions, then cut into sections; soak the dried shrimp in water, then drain.

2. Bring a pot of water to a boil, briefly blanch the bean curd sticks, then remove and rinse under cold water before placing them in a serving dish.

3. Add the scallion segments, salt, MSG, and scallion oil, tossing until evenly coated and well-flavored, then sprinkle with dried shrimp and serve.
