Stir-Fried Cabbage with Sichuan Peppercorns and Dried Chili Peppers

Ingredients

300 g cabbage, 100 g each of green bell pepper and soybeans.

Seasonings

4 teaspoons salt, 5 teaspoons each sugar, soy sauce, and rice vinegar, 1 teaspoon sesame oil.

Steps

1. Remove the stems and seeds from the green bell peppers, rinse them under cold water, and cut into 1.2 cm (about 1/2-inch) cubes.

2. Remove the root from the cabbage, wash it, and cut into small pieces; rinse the soybeans with water, drain, then stir-fry them in a pan until cooked through, and remove from the pan.

3. Add the diced green bell peppers, cabbage pieces, and soybeans to a clean jar. Mix in the sugar, salt, soy sauce, rice vinegar, and sesame oil, stirring until evenly combined. Seal the jar tightly and let it marinate in a cool, shaded place for 3 days before serving.
