Stir-Fried Chinese Broccoli with Chili Oil

Ingredients

500 g (about 1 lb) Chinese broccoli (gai lan), 50 g red chili peppers.

Seasonings

15 Sichuan peppercorns, 2 teaspoons each of fine salt and sesame oil, 1/2 teaspoon MSG, 1 teaspoon sugar, 1 tablespoon vegetable oil.

Steps

1. Peel the outer skin from the Chinese broccoli (gai lan), wash, and slice diagonally; remove the stems and seeds from the red chili peppers, wash, and cut into diamond-shaped pieces.

2. Heat vegetable oil in a wok over medium heat until it reaches about 140°C (285°F), then add Sichuan peppercorns and fry until fragrant, pour the oil into a large bowl and stir in sesame oil.

3. Bring water, salt, and vegetable oil to a boil in a pot, add the sliced Chinese broccoli and blanch, then add the red chili slices and bring to a boil again, remove and drain, transfer to a bowl with Sichuan pepper oil, add salt, MSG, and sugar, and toss to combine.
