Crispy Tender Cucumber Salad

Ingredients

200 g dried cucumber.

Seasonings

10 g scallions, 1 teaspoon Sichuan peppercorn powder, 1/2 teaspoon each sugar and MSG, 2 tablespoons Sichuan Pixian broad bean paste, and a pinch of salt.

Steps

1. Place the dried cucumber in a bowl, add warm water and soak until softened, then remove the cucumber and drain well before using.

2. Finely chop the Pixian broad bean paste into a smooth paste; trim and wash the scallions, then cut them into chopped scallions and set aside.

3. In a bowl, combine salt, MSG, sugar, Sichuan peppercorn powder, and Pixian broad bean paste to make the seasoning sauce, then add the dried cucumber and toss thoroughly to coat, transfer to a serving plate and sprinkle with chopped scallions before serving.
