
Ingredients
100 g firm tofu (dried tofu), 250 g (about 1/2 lb) Indian aster (Malabar spinach or Chinese greens).
Seasonings
Salt, sugar 1 teaspoon each, sesame oil 2 teaspoons.
Steps
1. Remove tough stems and old leaves from the shepherd's purse, wash thoroughly, blanch briefly in boiling water, then remove and rinse under cold water.
2. Rinse repeatedly in clean water, squeeze out the excess liquid, then finely chop and place in a bowl. Add salt and sugar, and mix well.
3. Lightly blanch the spiced dried tofu in boiling water, drain well, cut into small cubes, add to the plate with the Indian aster, drizzle with sesame oil, toss to combine, and serve.
