Chrysanthemum Chicken Gizzards

Ingredients

400 g (about 14 oz) fresh chicken gizzards

Seasonings

Scallion segments, ginger slices, salt, MSG, white vinegar, ground white pepper, cooking wine, soy sauce, and vegetable oil, each to taste.

Steps

1. Clean and prepare the chicken gizzards, drain well, then score a crosshatch pattern on the inner side and cut into pieces. Place in a bowl, add scallion segments, ginger slices, cooking wine, white pepper, and a pinch of salt, then toss to combine and marinate briefly.

2. Heat vegetable oil in a wok until hot, then deep-fry the chicken gizzards until cooked through. Remove with a slotted spoon and drain excess oil. While still hot, toss with soy sauce, white vinegar, salt, and MSG until well combined. Transfer to a plate and serve.
