Thai-style Chicken Feet

500 g (about 1 lb) frozen chicken feet (phoenix claws).

250 g (about 1 cup) white vinegar, 500 g (about 2 cups) Thai-style sauce, and Fen Ti sauce (a Chinese-style dipping sauce) to taste.

Steps

1. Thaw the frozen chicken feet, chop off the tips, soak in clean water and rinse thoroughly, then place them in a pot of fresh water and bring to a boil.

2. Reduce the heat to low and simmer for 40 minutes, then turn off the heat and let soak for 20 minutes. Remove, rinse under cold water to cool, and chop each chicken foot in half.

3. Place in a container, add white vinegar and stir well, then marinate for 20 minutes. Soak in fresh water for 2 hours, then drain thoroughly.

4. Soak the chicken feet in Thai sauce for 10 hours until fully flavored. When ready to serve, remove from the sauce, arrange on a plate, and serve with Fen Ti sauce on the side.
